Cajuns are French-Canadians who left Canada
starting around 1755 for religious--among other--reasons and
ended up in Southern Louisiana. The word 'Cajun' comes from
the word 'Acadian', which is what people are called from Acadia
(the Canadian province from which the Cajuns originally came).
The influence of Southern United States English, Spanish and
who knows what else created a very distinctive dialect of French.
